Collage Restaurant is relatively new addition to the St Augustine dining scene, formerly known as La Parisienne.  Since September of 2006, owners Mike Hyatt and Cindy Stangby have expanded on the French cuisine to include dishes from all over the world, and in February 2007 change the name to Collage - artful global dining.  Their menu is eclectic, with an emphasis on the freshest local seafood available, steaks, and more.  This is a great place to stop if you're in the mood for something new, different, and exciting.

Columbia Restaurant

Gypsy Cab Company opened in 1983 and was the brainchild of chef owner Ned Pollack. Offering a multitude of cuisines such as Italian, German, Cajun, Mediterranean, classical European, Southern, Oriental and Florribbean, Gypsy Cab Company has a reputation for being one of the best spots to dine. The Gypsy Bar and Grill is the restaurants newest addition and this part of the St. Augustine Restaurant's area is the perfect location for wedding receptions, rehearsal dinners, various group functions and an overall excellent place with live music each Wednesday. La Cocina

La Cocina is located in the Castillo Real Hotel and it is here that Chef and owner Juan Solano concocts a menu full of international specialties featuring local fish and shellfish, crab cakes, filet mignon, pastas, Paella valenciana and infuses each dish with his own native Mexican tastes. The lunch menu is filled with hot and cold appetizers, delicious sandwiches, soups, and other entrees priced from $9.50. La Strada
